Einkorn is the oldest type of wheat: it was the first cereal cultivated by humans, more than 10,000 years ago.

Nutritionally, it provides fibre, antioxidants and bioactive compounds, particularly carotenoids, minerals and vitamins. Its gluten has low elasticity.
